BBQ Chicken & Pomegranate Red Rice Salad

Here’s a delicious, quick, healthy and unusual meal I knew would be a real crowd pleaser for dinner last night.

Cook 1 cup of red rice to packet instructions then mix in the dressing (lemon juice, olive oil and sugar) while you let the rice cool.

In a large serving dish combine a shredded BBQ chicken, cucumber chunks, spring onion, pomegranate seeds, feta cubes, nuts and dill then mix together with the red rice and serve!

Works well as both a dinner or lunch meal option, heated or cold. Very delicious!
